What an absolutely beautiful weekend here in Maine! For October, to be in the 80’s, pretty rare around here, but I am NOT complaining, as much as I love Fall, and I do..a sunny weekend in the midst of it all is fabulous! However, this past week was different, it was a bit cooler, and actually felt like Fall! I love cooking (obviously!) so there is nothing better to me than inviting some friends over for dinner & dessert and some great conversation. I made a delicious marinated roast chicken, which roasted garlic and chive mashed potatoes and onion garlic carrots roasted in olive oil…it was absolutely fabulous, and a perfect dinner for a relaxed night at home with some friends, very homey! (Recipe for the roast chicken to come!) Now I can cook and I can bake but when it comes to making drinks, and being any sort of bartender, I leave that to the boyfriend..I’ve tried, it’s not a pretty sight! He, on the other hand, can make magic! So we’re going to start creating drinks for you all (or he will do the creating!) and featuring them every weekend, we all need to kick our feet up and relax!
So to go along with that fabulous Chicken dinner, he made us all Spiced Apple Cider Martinis, perfect for this time of year, and you will not be sorry, they were delicious! Sometimes I have a hard time with martinis, ever since I had our son, my taste buds are much more peculiar when it comes to alcohol, and martinis tend to be far to strong, but this wasn’t very strong (mine wasn’t at least!) My favorite thing about drink recipes, is that it is so easy to alter the amounts of alcohol based on your own personal preference! But here is how he made them, and before you alter them, try this, because it is fabulous! The cinnamon flavor is a fabulous taste to have left in your mouth, it truly makes you appreciate Fall! (Here is all that you will need!)
Spiced Apple Cider Martini
Yields: 1 martini
- 3 oz Apple Cider
- 2 oz Spiced Rum
- A splash of Amaretto (I tried to get this clarified, he says “literally a small splash”)
- 1/4 tsp Cinnamon (just a dash!)
- Apple Slice for garnish
- Cinnamon Sticks for garnish
- Granulated Sugar
- Fill the shaker halfway with ice.
- Add your apple cider, spiced rum, amaretto, and dash of cinnamon to the shaker and shake!
- Put about a 1/4 cup of sugar and 3 tablespoons of cinnamon on a plate and mix together.
- Run your apple along the rim of the glass. Coat the rim with the cinnamon and sugar mix.
- Pour the shaker into the glass, garnish with a cinnamon stick and apple slice!
(A yummy tip! Throw you apple into your drink and when your martini is gone, you’re left with a deliciously flavored apple slice! yumm! Enjoy!)
P.S. Notice the BEAUTIFUL Fall colored flowers the boyfriend brought home for me that night 🙂 He’s so amazing, I am one very lucky gal!
