Crispy Chicken fingers

I looove chicken fingers just as much as the next person, but I HATE that they’re dunked it oil to be cooked! So instead of cooking them in a huge pot of fatty oil to make them crispy, I had a better idea, and its even more magnificent than flour drenched chicken fingers. The secret ingredient? Panko! Duhh! Seems to obvious! Smile These were so good though..we finished them in less than 10 minutes..if that’s any indication?

We couldn’t decide what flavor we wanted so instead of tossing them in a sauce after we were done, we just threw both options on the table and dunked back and forth getting a little bit of sweet with the Honey BBQ, and a little bit of spicy with the Franks Red simple! This way we were both happy!

If you love crispy chicken fingers as much as I do, but hate the fat content, these are totally the way to go! We balanced it out with some baked broccoli smothered in garlic, salt, and pepper..made me feel EVEN BETTER about eating chicken fingers! Winking smile Go make these easy, fast, delicious crispy chicken fingers! They’re perfect as finger food for your next party, or if you’re a glutton like us, as dinner! Enjoy!!

Crispy Chicken Fingers

  • 2 large chicken breasts, cut into small strips
  • 1 cup buttermilk
  • 1 1/2 cups Panko
  • 1/2 Tbsp. Kosher salt
  • 1 tsp. Pepper
  • 1/2 Tbsp. Garlic Powder
  • 5-6 Tbsp. Oil, divided

  1. Rinse your chicken and cut it into small strips. Soak in the buttermilk while you’re getting everything else ready. (The longer it soaks the better though.)
  2. Combine your panko, salt, pepper, and garlic powder on a plate.
  3. Heat up a skillet with a couple tablespoons of the oil. Once heated, dredge your chicken in the panko mixture, then move to the skillet. (The chicken should start sizzling when you put it in, if it doesn’t the pan isn’t warm enough yet.)
  4. Cook for about 1-2 minutes on each side, until the outer crisp is golden brown. Move to a paper towel covered plate.
  5. Repeat until you’ve finished with all the chicken strips.
  6. Dunk in Red hot, BBQ Sauce, or anything your heart desires!
