Tomato & Bell Pepper Tarts

For the past seven months or so, I’d get on Facebook Monday mornings and see everyone bitching about the fact that its Monday, whining about ‘when is the week going to end’ and ‘back to the grind’ etc etc…I always either laughed or just brushed it off, but never thought much about it..until NOW. I am now one.of.them. I whine..I wake up Saturday morning, dreading Monday..I countdown the days until the weekend…because I am now one of you, who are up WAY to early Monday through Friday, and who whine about it…well from now on, I’ll be moaning and groaning with you!

Now about these delicious, easy, can’t keep on the plate for more than seven minutes, baby tarts…they are wonderful! They’re light, flavorful, sweet, and savory..they’re perfect! (Plus they’re on puff pastry and who doesn’t looove that?) These were feautred in my Friday Favorites two weeks ago, and I am so glad I decided to make them! I served these to friends while watching the playoff game, and they were completely devoured in less than eight minutes, not even exaggerating! They’re the perfect appetizer! So make them, and ENJOY!


Tomato & Bell Pepper Tarts


  • 2 sheets puff pastry, thawed out
  • 1/2 cup Asiago cheese, freshly grated
  • 2-3 Tbsp Olive Oil
  • 2-3 garlic cloves, finely  minced
  • 10-12 cherry (or grape) tomatoes, thinly sliced
  • 1 yellow (or orange) bell pepper, thinly sliced


  1. Preheat oven to 400 degrees 
  2. Unfold and roll out puff pastry, one sheet at a time, on a lightly floured surface into a medium-sized square, about 10×10 inches.
  3. Brush the square with olive oil until fully covered.
  4. Sprinkle the minced garlic all over the oiled pastry dough.
  5.  Sprinkle the grated cheese onto the doughs surface
  6. Using a pizza cutter, or a knife, slice the dough into squares, about 2x2inches. Place on parchment paper on a baking sheet.
  7. Top each square with a couple sliced tomatos and bell peppers.
  8. Bake for 12-15 minutes, until golden brown.
  9. Watch them be devoured instantly!
